Northern Morocco was Spanish rather than French and it shows in the language, the food and the architecture. Most tours use the Rif as a road to Fes and stop in Chefchaouen for four hours at midday, which is the worst four hours of the day there. This gives the blue town two nights so you get it at dawn, adds Tetouan's Andalusian medina, which is a UNESCO site almost no tour visits, and puts a walking day in Talassemtane park. Slots neatly in front of any southern itinerary.
Why I run it this wayThe north on its own terms rather than as a corridor to somewhere else. Chefchaouen gets two nights, which is the only way to see it without the day-trippers.

- Cap Spartel where the Atlantic meets the Mediterranean, and the Caves of Hercules
- Asilah's whitewashed medina and its painted walls
- Tetouan's Andalusian medina, UNESCO-listed and almost tourist-free
- Two nights in Chefchaouen, including the blue lanes at first light
- Akchour waterfalls and the God's Bridge rock arch
- Volubilis in late afternoon light on the way into Fes

How the trip goes

Day 1: Tangier to Tetouan
Driving: About 3 hoursMet at the port or airport. Cap Spartel and the Caves of Hercules, then south to Asilah's murals, and on to Tetouan's Andalusian medina with a local guide.

Day 2: Tetouan to Chefchaouen
Driving: About 2 hoursUp into the limestone Rif. Arrive with the afternoon free for the cobalt stairways and the kasbah museum, then the climb to the Spanish mosque for golden hour. Two nights here.

Day 3: Akchour
Driving: About 1 hourInto Talassemtane park for the river walk to the Akchour waterfalls and the natural rock arch. Four to five hours at an easy pace, swimming in season.

Day 4: Chefchaouen to Fes via Volubilis
Driving: About 4 hoursThe blue lanes at first light while the town still belongs to itself. Then down through the farming valleys to Volubilis for the Roman mosaics in low sun, and into Fes.
