Moroccan food gets reduced to tagine and mint tea, which is like reducing Italy to pizza. This follows the supply chain instead of the monuments: olive presses on the Saiss plain, the communal wood-fired bread ovens where every household still sends its dough, a herbalist who will blend ras el hanout in front of you, and a farm outside Marrakech where lunch is picked before it is cooked. You will eat things that appear on no menu, because I will take you where I eat.

Why I run it this way

Food as the route, not a cooking class bolted onto a normal tour. We follow ingredients to where they grow and to the people who process them.

How the trip goes

  1. Day 1: Casablanca

    Driving: About 1 hour

    Pickup, the central market seafood stalls and the colonial-era bakeries. Welcome dinner of coastal tagines.

  2. Day 2: Casablanca to Fes via Meknes

    Driving: About 4 hours

    Through the olive groves of the Saiss plain with a private oil tasting near Volubilis, then Meknes and into Fes.

  3. Day 3: Fes, eating

    Driving: No driving

    A curated walk through the medina: honey, khlii, pastries, and the wood-fired farran where the neighbourhood's bread is baked. Afternoon with a family cook.

  4. Day 4: Fes to the Middle Atlas

    Driving: About 4 hours

    South into the mountains, tasting cedar honey and mountain cheeses, stopping at whichever rural market falls that day. Night in the foothills.

  5. Day 5: Foothills to Marrakech

    Driving: About 5 hours

    Down to Marrakech. Afternoon spice-blending with a herbalist in the medina, learning what actually goes into ras el hanout.

  6. Day 6: Farm to table

    Driving: About 1 hour

    Morning harvest at an organic farm outside the city, then a hands-on class: slow-cooked tanjia, vegetable tagines, and the salads. You eat what you made.

  7. Day 7: Marrakech

    Driving: No driving

    A pastry walk through quarters you would not have found, plus honest advice on what will survive the flight home. Drop-off.
